Ultra Rhizome Flavor

A triploid aroma-type cultivar, originated in 1983 from a cross between the colchicine-induced tetraploid Hallertau mf (USDA 21397) and the diploid Saazer-derived male genotype (USDA 21237m). Ultra is the half-sister to Mount Hood, Liberty and Crystal. Its genetic composition is 4/6 Hallertau mf, 1/6 Saazer, and 1/6 unknown. This cultivar was released for commercial production in March, 1995. It has a peppery, spicy aroma similar to Saaz. Substitutes: Crystal, Saaz, Tettnanger.(Reference)

Ultra was bred by U.S.D.A. from a tetraploid Hallertau mf cultivar and a Saazer-type male diploid genotype. It is a half-sister to Mt. Hood, Liberty, and Crystal. Ultra has a mild and pleasant Saaz-like aroma. It has very low alpha acids compared to most U.S. aroma varieties.

Rhizome Growing Information
A triploid seedling of the Hallertauer variety with good mid-season yield, good vigor that tends to produce a top-crop, moderately resistant to Downy Mildew and no major reactions to virus infection.

STORAGE STABILITY: good, similar to Fuggle (USDA 48209) or Willamette (USDA 21041)
OIL: 1.3 to 1.5 ml/100 g, somewhat higher than Hallertauer mittelfrueh. 30 - 40% humulene, 30% myrcene, 12 - 14% caryophyllene, no farnesene. This oil composition is nearly identical to that of Hallertaur mittelfrueh
MAJOR TRAITS: similar aroma profile to Hallertauer mittelfrueh; high yield potential
OTHER INFORMATION: This hop is a triploid, 2n= 30 and is nearly seedless even when grown in the presence of fertile male hops. Ultra is prized by craft brewers because of its Hallertauer -like aroma and pleasant bitterness.
