Cascade Rhizome Flavor

Very successful and well-established American aroma hop developed by Oregon State University's breeding program in 1956 from Fuggle and Serebrianker (a Russian variety), but not released for cultivation until 1972. It has a flowery and spicy, citrus-like quality with a slight grapefruit characteristic. One of the "Three Cs" along with Centennial and Columbus. Substitutes: Centennial and Columbus (but they have a higher Alpha Acid content).(Reference)

Cascade is an aroma hop that was developed by the U.S.D.A. breeding program in Oregon and released in 1972. It has a medium strength aroma that provides a unique floral/spicy character with well balanced bittering potential. It is the most popular hop with the U.S. craft brewing industry.

High-yielding, floral American aroma type developed by the USDA breeding program in Oregon and released in 1972. Well-balanced bittering qualities with low amounts of alpha acids. Very tolerant to Downy Mildew but highly susceptible to aphids. Mid-season maturity.

MAJOR TRAITS: Crown resistance to downy mildew; ratio of alpha/beta acids similar to European aroma hops; contains small amounts of farnesene (about 4%), H/C ratio - 2.67; 10% humulene.
OTHER INFORMATION: Virtually identical to USDA 56013, except for slightly higher yield and quality potential. Mostly grown in Washington where the alpha acids content is often slightly lower than beta, resulting in an alpha/beta ratio below 1. Total 1991 production 2.54 mill. lbs. on 1240 acres, all in Washington; 1997 production 2.11 mill. Lbs, all in Washington. Craft/microbrewers love this hop for its distinctive flavor.
